Catherine is a registered dietitian specialized in human nutrition who is a plant based enthusiast and she has an amazing blog to inspire everyone to eat more plants. She has been vegan since 2009 and she currently follows a mostly whole foods plant based diet. “Making the switch to a vegan lifestyle has impacted my life in more ways than one. It helped transform my life towards better self care, redirect my passions and even impacted my career choices. “Mostly” whole foods because I definitely fit in vegan treats on my blog to enjoy with as much mindfulness as possible.” Why she chose such a lifestyle?
